Sweet & Spicy Street Tacos & Slaw

Some days are reserved for silence in the kitchen. Just simple, meditative silence.
Flow. Movement. But little chatter, little noise, and little thought – or maybe a lot of thought. Today was one of those silent days. Without much to say…Sweet & Spicy Street Tacos & Slaw.
Sweet & Spicy Street Tacos & Slaw
2 lbs. pork shoulder
2 cups sweet & spicy BBQ sauce
1 jalapeño, seeded and diced
1 small head red cabbage, finely chopped
1 jalapeño, seeded and diced
juice and zest of 1 fresh lime
1/4 cup mayonnaise 
sea salt
8 street taco flour tortillas
1/4 cup feta cheese, crumbled
fresh cilantro
Cook the pork shoulder with the BBQ sauce and jalapeño in a slow cooker for 3-4 hours.
Once it’s cool enough to handle, shred between two forks or with gloved hands. Stir the shredded meat into the remaining sauce for full flavor absorption.
While the meat is cooking, combine the cabbage, the second jalapeño, lime, mayo, and salt. Stir well and let sit in the fridge for the flavors to combine while the meat cooks.
When ready to serve, top each little tortilla with a serving of pork shoulder, a scoop of slaw, a sprinkle of feta, and a garnish of cilantro.
