It’s Taco Tuesday!
It is, and it’s also one of those days where I still love to cook in the kitchen, but I’m feeling kind of lazy. Don’t get me wrong – I’m rarely too tired to cook, but I just can’t seem to get out of a brain funk – a lack of creativity funk.
Thus, without any effort at all, and because it’s Tuesday (Taco Tuesday), and because Valerie suggested it, and because who doesn’t love tacos?….
Oven Baked Tacos – super easy and super delicious.

Thus, without any effort at all, and because it’s Tuesday (Taco Tuesday), and because Valerie suggested it, and because who doesn’t love tacos?….
Oven Baked Tacos – super easy and super delicious.
1 lb. lean ground beef
1 cup your favorite salsa
sea salt
2 cups shredded cheese
1 pkg. taco shells
1 avocado, thinly sliced
sour cream
fresh tomatoes, sliced olives, shredded lettuce, all the taco fixings…
1 cup your favorite salsa

2 cups shredded cheese
1 pkg. taco shells

fresh tomatoes, sliced olives, shredded lettuce, all the taco fixings…
Preheat the oven to 350 degrees.
In a large skillet, brown the ground beef over medium heat and break up with the back of a wooden spoon.
Season with salt.
Once the beef is cooked, stir in the salsa and reduce.
Line a baking dish with the taco shells and fill with half the cheese.
Fill each cheesy taco with a few scoops of the beef.
Top again with cheese.
Bake for about 5-10 minutes, until the cheese is bubbly.
Serve with your favorite taco toppings!
