Blood Orange Salmon















My last post was of Homemade Pasta With Blood Orange. It was inspired by a night out with family when I was gifted a bottle of this flavor-packed olive oil. This simple salmon recipe pairs perfectly with that pasta.

Preheat the oven to 350. Line a baking sheet with parchment paper. It doesn't need to be an exact fit. It's meant to keep the salmon from sticking. Cover all sides of each fillet in blood orange olive oil. Place salmon, skin-side down, on parchment. Top with ground rosemary, salt, pepper, and orange zest. Cook at 350 for 17 minutes. Any longer will dry it out. Before plating, squeeze a few segments of blood orange juice over the top. Serve with a few blood orange slices and Homemade Pasta With Blood Orange that was posted yesterday.
  • 2 6-8oz salmon fillets
  • 3 T blood orange olive oil
  • 1/4 t salt
  • pinch of pepper
  • 1/4 t ground rosemary
  • 1 blood orange
